I am excited for this fall in particular! I looked back and I realized that it has been almost 5 years since the first tasting of varieties of Millhouse rolls. It's been 16 years since I started making the original, but it wasn't until I had my first tasting of flavors that I began to scratch the surface of what this recipe could do. I began to understand that I would experiment with two goals; to have fun and to create classic flavors.
When I am having fun, I open wide my imagination and play with flavor ideas. "What is my new inspiration?" is the question that comes to mind. Loving the flavor of a new spice? Try it out in a half batch or whole batch of dough (I must try a smoked paprika roll soon) . Got interested in exploring a new twist on a familiar food memory? Give it a whirl in dough ( Pineapple Upside-Down Rolls were a hit for me this summer). With a few considerations for how different ingredients interact, you can do almost anything.
Sometimes, after I try a flavor that I like, I think of ways to make it better. I focus in on a more specific direction of aroma, appearance, texture, and taste. Searching for the "Ah HA!" moment when a flavor is perfected. What I mean is, when other people try them and are left practically speechless to describe how good it is, and you can find no further necessary improvements on that variety, it's a finished, complete flavor.....i.e. perfected. Your flavor intuition and experience affect how quickly you can reach this stage.
(The Carrot Raisin was one of my first, so it took me four or five trys to get the best expression of that flavor. Some others?
Sweet Potato-3 tries, Italian-2 tries, Pineapple Upside Down- 2 tries, Peppermint.....gotta work on that one some more :) )
